Cruelty, meet irony.

The human beings who run the Copenhagen Zoo apparently have a single-minded approach to managing the institution: If the animals trapped in their breeding program do not measure up to the humans’ arbitrary standards (too old, too young, too weak, too common), the animals are killed.

Only they don’t call it that. Instead of killing, they call it culling, which the humans apparently think sounds better but doesn’t make any difference to the animal involved. Dead is dead, however one tries to gussy it up with phony, save-the-species kind of language. And dead for no good reason is, at heart, cruelty.

In March, the Copenhagen Zoo bosses killed a healthy, 18-month-old giraffe, named Marius, because, they said, his genes were not needed in their breeding program. He was surplus. They rejected offers from other zoos to take Marius and shot him in the head with a bolt gun, dissected him front of a crowd that included young children, and fed his remains to the zoo’s lions.

This week, they killed the lions, a family consisting of a 16-year-old male, a 14-year-old female and their two, young cubs. The humans said the adult lions were nearing the end of average zoo age (which is actually 25) and were simply too old for breeding, even though they had just produced two young cubs

The cubs, like Marius, simply had the misfortune of being born at the Copenhagen Zoo. They were killed because the zoo had its eye on a young lion at another Danish zoo that it wanted to mate with two younger females at Copenhagen, to create a new pride. The females are offspring of the deceased male and the zoo officials said they wanted to avoid in-breeding. They also said the young male they had their eyes on would just kill the young cubs anyway, so bye-bye.

Apparently, sterilization or merely swapping healthy animals between zoos to let them live out their lives are concepts that do not fit into the breeding program of the European Association of Zoos and Aquaria, to which the Copenhagen Zoo and about 345 others in Europe belong. The Copenhagen Zoo said it had no offer to take the lions off its hands, but its treatment of Marius shredded any credibility on that count. In addition to rejecting an offer from another zoo to take the giraffe, the zoo speeded up his execution in response to a petition signed by tens of thousands of people around the world to spare him.

When Marius was killed, the corresponding zoo association in the United States said such a thing would never happen in this country because the zoos sterilize or swap healthy animals. That’s instead of killing them for expedience, or budget-balancing or ego-satisfaction or whatever is driving the men in charge in Copenhagen. Certainly, it’s hard to believe animal welfare enters into their calculations.

Zoos are ostensibly a means to protect and preserve species of animals on this planet and to expose and educate millions of people about the beautiful diversity of wildlife most of us would never have the opportunity to witness. But grabbing animals from their native habitats and breeding them in captivity, for whatever stated reasons, does not give humans the right to mistreat the animals, to cage them and treat them as entertainment, or to regard them as some kind of laboratory experiment which can be discarded in the name of science or conservation.

What the Copenhagen Zoo (and others that operate under the same principles) does has nothing to do with wildlife conservation, humane education, or respect for animals. It is strictly about the convenience of the humans. EAZA said it “regretted” the deaths of Marius and the lions, but that the Copenhagen Zoo has been consistent in its approach and has broken no association rules. That’s lame and, frankly, should be embarrassing to other members. It is time for zoos in Europe and elsewhere to rethink their mission and find more humane, compassionate ways to go about meeting it.

Finally, there’s another word they sometimes use in zoos when they talk about animals — euthanize. A lot of reporting on the Copenhagen Zoo killings said the giraffe and the lions were “euthanized.” No they weren’t. Animals who are sick or injured or lingering painfully near death are euthanized to relieve their suffering. There is no mercy in killing a healthy animal being held in captivity.

Since I began eating more healthful food (and writing about it), I’ve been paying more attention to the things people say and the choices they make when it comes to taking care of themselves. I’ve noticed they don’t always coincide.

While many acknowledge that a regular diet of red meat, fried, processed, salt-laden, sugar-soaked foods is not healthy, “eating healthier” often doesn’t eliminate the problem. Instead, the choice may be to eat less of the foods we say we shouldn’t eat, rather than eating more foods (fruits and vegetables) that are actually be good for us. We tweak. We cut down on the potato chips. Switch to diet soda. Try “low-calorie” prepared dinners. Get a small order of french fries instead of large.

This may be better than doing nothing and may cut a couple of calories. It also may save a little money.

Ahh, money. Personal finances can certainly affect the choices we make. In many quarters, the notion persists that eating healthy, while it sounds great, is just too expensive. This belief is fed in large part by TV commercials for the corporations that control our food supply. We are inundated with commercials designed to make us feel good about the particular food product (cereal, soda, fast-food, lunch meat). These are often aimed at children, who can influence parents’ food choices.

The products are marketed as inexpensive and good for us. But the processed foods that make up the bulk of the diet of most Americans are loaded with salt, chemical preservatives to prolong their shelf life and a variety of natural and artificial sugars to make them more palatable — and addictive. Large food corporations get big tax breaks and huge factory farms, which expose animals to disease and abuse, get government subsidies, which helps them to keep their prices down. Spraying crops with chemical pesticides lets big growers sell produce cheaper than organic farmers who don’t use chemicals. It makes Monsanto richer, but can hardly be considered good for our health.

Because of this government/corporate partnership emphasizing mass production of what is described as “affordable” food, many people who sincerely want to choose more healthful foods may feel they can’t afford to eat “all that organic, natural, chemical-free, grass-fed, free-range, non-GMO stuff.”

In truth, Americans can’t afford not to eat what used to be called, just plain food. Think about it. Why should food with nothing added to it have to carry labels that, thanks to years of brainwashing, make people think “expensive”? Why not just “apples,” “melons,” “grapes,” “berries,” “steak,” “chicken”? Why not, instead, require foods with all that stuff added to carry labels that say: “Added sugars, natural and otherwise;” “Loaded with salt;” “Chemical additives;” “Genetically modified;’’ “Full of fat;” “Sprayed with toxic chemicals;” “Fed tainted grain;” “Natural flavors produced in laboratories;” “Raised in warehouses;” or “No nutritional value”?

In a recent column, I offered what I called “the new breakfast of champions.” Instead of Wheaties and a banana, it consisted of a bowl of coconut/vanilla Greek yogurt, two sliced bananas, a big bunch of halved, red globe grapes with seeds, a mound of whole ground flaxseed meal, a healthy serving of blended trail mix (almonds, cranberries, cherries, raisins and pistachios), and a generous topping of all-natural chocolate granola.

Among the responses I got was this one from Marshall Rubin: “I have no qualms about your ‘Breakfast of Champions,’ especially since it’s way more healthy than my morning bagel with cream cheese and a can of lightly-salted V-8 vegetable juice. But one thing wasn’t mentioned: the cost of your meal. I’m a retiree watching my quality of life decrease as I continue to get no COLA raises from Social Security and my NJ state pension. My bagel breakfast costs less than $2. What does your breakfast cost?”

Excellent question. First, let me note that I, too, get a Social Security check and a pension check each month. Now, let’s deal with the breakfast: The Greek yogurt cost $1 for the cup, so that’s already half your cost, Marshall. But all the other ingredients are bought in more than single-serving sizes — bananas at 59 cents a pound; grapes were on sale at $1.69 a pound; a one-pound bag of ground flaxseed meal (free of everything and delicious) cost $14. The trail mix and granola are pricey at $4.99 and $5.99 a bag, respectively. But, like the flax seed, they provide the healthful ingredients for many breakfasts. It all depends on how hungry you are.

Ordering this delicious breakfast (which can be changed for taste and variety reasons) — if you could find a restaurant offering it — would absolutely be expensive. We call it our $8.50 breakfast, but the cost is probably just a little more than the $2 bagel-and-V-8 breakfast. There is no comparison, however, in the health benefits. That’s what gets missed in the discussion about the cost of healthful foods.

Eating all that salt, sugar, chemicals, preservatives and other additives has made billions of dollars for those food/chemical corporations, insurance companies, pharmaceutical companies and fast-food companies while producing millions of overweight, out-of-shape Americans. Recent surveys show that, as a people, we are fatter and less fit. Also, prone to diabetes, heart disease and high blood pressure. But if we chose to spend money on more healthful foods to begin with, that would cut down on doctor visits, insurance costs and the need for so many drugs to keep from getting seriously ill, never mind staying healthy.

Again, it’s a choice. Tweaking an unhealthy diet is not enough. It seems to me that the only way to bring down the cost of eating healthy is for enough people to demand better choices from the major suppliers of food and more government support for providers of healthful food. (A calorie-counting campaign by the First Lady is not enough.) Some of this pressure, largely through social media sites, is already being felt by the food giants, but much more needs to be done.

Meanwhile, here’s a brief look at the health benefits of that breakfast of champions of mine:

  • Greek yogurt: Go for low-sugar and low-fat. Loaded with protein, calcium, and probiotic cultures. Also, potassium and Vitamins B6 and B12. Low in calories, lactose, carbohydrates and sodium. Also, it’s creamy and tastes great.
  • Bananas: Have no fat, cholesterol or sodium. They do have potassium, Vitamin C, fiber and Vitamin B6. Thought to be good for, among other things, heart health and regularity. Also contain tryptophan, which helps boost memory.
  • Red globe grapes with seeds: No fat or cholesterol. Contains resveratrol and flavonoids and antioxidants. Helps with weight loss, improves blood flow (helping protect against heart attack and high blood pressure) and may help fight Alzheimer’s. Promotes skin and hair health, helps fight aging and kidney disorders.
  • Milled flaxseed: Loaded with lignans, which provide the antioxidant benefits of fighting cardiovascular disease. Also loaded with omega 3 fatty acids, which promote healthy nerve function and Vitamin B1, or thiamin, which boosts energy. Great source of fiber and may help reduce hot flashes in menopausal women.
  • Trail mix: Almonds and pistachios promote heart health and good cholesterol levels. Source of protein, magnesium, calcium, Vitamin E, Vitamin C, iron, fiber. Cranberries fight urinary tract infection and can help decrease blood pressure. Raisins help fight constipation, boost energy and promote mouth and bone health. Also are anti-inflammatory. Cherries help fight arthritis and inflammatory conditions and help lower blood sugar.
  • Chocolate granola: The oats help lower cholesterol and promote intestinal health. Plenty of fiber. Don’t overdo the chocolate chips and enjoy the taste.

“Here it is,” she said with a smile, “the breakfast of champions.”

No, it wasn’t a bowl of Wheaties with a banana sliced on top. It was, check it out: A bowl of coconut/vanilla Greek yogurt, two sliced bananas, a big bunch of halved, red globe grapes with seeds, a mound of whole ground flaxseed meal, a healthy serving of blended trail mix (almonds, cranberries, cherries, raisins and pistachios), and a generous topping of chocolate granola (ingredients to come later).

Breakfast was sweet, rich, juicy, crunchy, delicious and filling. My breakfast partner does not skimp on the portions. And, by the way, it was incredibly good for my health.

When I decided for health reasons to move away from a diet centered on meat and fried foods to one focused more on plants, my major concerns were that I would be able to eat enough to feel full and energetic and that I would find enough food that I actually liked.

No problem, thanks again in large measure to my breakfast partner. And it hasn’t been a problem since I made the decision. What it has been is a gradual process of becoming accustomed to, not necessarily foods that are new to me, but a new way of looking at some familiar foods and a new way of making them part of my regular diet.

I now eat lots of rice and beans and greens and baked potatoes and sweet potatoes and fruits and vegetables. Also some pasta. Pizza is still on the menu. I also eat vegetarian versions of meatballs, bacon, sausage, turkey with all the vegetables, etc. No portion control. Again, the tastes are a bit different, but delicious. It’s all in the way the food is prepared. That, to me, is mind over matter. I think we are conditioned from earliest days to think about certain foods in a certain way and, after a while it becomes automatic — so, lots of red meat is good, vegetables are wussy.

I’ve said it before, but I will repeat myself: I’m not crusading here. I don’t begrudge anybody eating whatever they choose (not entirely true — horses are not for eating). However, since my dietary changes, I’ve become increasingly aware of the strong contradiction in what many people say about their desire to be healthier (to lose weight, to have more energy, to feel stronger) and the food they actually eat. So I write about what I’m going through to maintain my own awareness and, maybe, let someone who’s contemplating a similar change know that it’s possible and not necessarily painful.

There’s a slowly growing awareness among Americans for the need to eat more healthful foods, foods free of chemicals and so-called “natural” added ingredients. You can see this in expanded organic food sections at supermarkets and half-hearted attempts by some fast-food chains to offer what they regard as healthier choices. When the monied interests — the corporations that control our food supply — start offering more choices, even though they may exaggerate their health benefits, I think it’s a good first step. They’re starting to pay attention..

It’s also a signal for consumers to start insisting on more such choices and at more reasonable prices. It seems to me that companies should not get rich by offering lots of cheap food that isn’t good for our health (and may actually be bad for our health) while pricing nutritious, tasty food out of the reach of far too many people. History tells us that, greed being what it is, this corporate mindset won’t change unless enough customers insist on it by spending their food money differently. By putting our money where our mouths are and by insisting that elected officials do more to protect the food supply rather than the food suppliers, we might actually be able to help ourselves become healthier.

Back to the breakfast of champions. It satisfies the various food pyramids’ daily recommendations on fruits, nuts, seeds and dairy in one sitting. It is full of super foods:

  • Greek yogurt: Loaded with protein, Vitamin B12 and calcium. Also has potassium, B-6 and magnesium.
  • Bananas: Good for Vitamin B-6, Vitamin C and potassium. Also magnesium and dietary fiber.
  • Red grapes: Source of resveratrol, which helps dilate blood vessels, which can lower blood pressure. Also may help weight loss by reducing cells’ ability to store fat.
  • Flaxseed meal: Soluble and insoluble fiber. Studies suggest flaxseed as regular part of a diet lowers bad cholesterol and increases good cholesterol. Has lignans, natural anti-oxidants that protect against unchecked cell growth. Source of alpha-linolenic acid, or omega-3, which can help provide healthy cholesterol levels, reduce cell inflammation (by supporting the integrity of cell membranes of vital organs, thereby protecting the body against disease). Also may lower blood pressure. Studies suggest flaxseed may help protect against some forms of cancer, decrease menopausal symptoms and reduce blood sugar.
  • Trail mix: Good source of Vitamin E, manganese, copper and magnesium (important minerals often neglected in many diets). Also a source of potassium and dietary fiber.
  • Chocolate granola: Among other things, it contains whole grain oats, ground flax seeds, rice and soy lecithin, an emulsifier that keeps the blood slippery..

Full disclosure, the chocolate granola, being a commercial product, contains sugar and cane juice. But people are free to mix their own granola. Like I said, I’m no purist, just a guy trying to live a longer, healthier life. One spectacular breakfast at a time.

 

R.I.P. Marius, the ‘Surplus’ Giraffe

They killed a giraffe in Denmark Sunday. Executed him, actually, with a bolt gun, at the Copenhagen Zoo. Then they performed an autopsy and butchered his body while an announcer explained what was happening to a crowd of onlookers that included lots of wide-eyed, young children.

Finally, they fed the carcass to the lions and tigers.

The Romans couldn’t have made more of a spectacle of it.

The giraffe, Marius, was 18 months old and, apparently, in the best of health. He posed no known threat to any other living creature. His “crime,” according to the two men responsible for killing him, was that he was too normal. The product of a breeding program at the zoo, Marius was apparently unfortunate enough to possess the type of genes that the scientists said were already well-represented in the zoo’s giraffe population. Allowing him to continue as part of the breeding program would not be good for the giraffe population as a whole, they said. He was surplus material.

Bam! Bye,bye, Marius.

There’s more. Copenhagen Zoo officials had an offer from Yorkshire Wildlife Park in Britain to take Marius off their hands. The British zoo is part of the same breeding program as the Copenhagen Zoo and has a state-of-the-art giraffe program. In fact, Marius’ older brother lives there. But Copenhagen Zoo officials didn’t even bother to answer the British zoo’s inquiries, saying they felt Marius and his surplus genes would also be taking up valuable space in the British zoo’s program. The offer of a private individual to buy Marius for $680,000 and place him in a wildlife preserve was also ignored.

One more thing. When word of Marius’ impending execution was revealed, more than 20,000 people signed online petitions to find him another home rather than kill him. Rather than discuss the matter with people who organized the petition, zoo officials moved up the execution without telling anyone.

There is so much wrong with this story, it’s hard to know where to start.

Let’s go with the arrogance that permeates this entire affair. First of all, giraffes are not considered to be an endangered species and the zoo scientists acknowledge the animals breed well. So why the breeding program in the first place? If the species is taking care of its diversity on its own, why do humans have to meddle in the process? Because we know better what’s good for them? Breeding a giraffe in captivity and then killing that same giraffe two years later because he possessed no special genetic makeup (Oops! We made a mistake.) hardly suggests a higher order of thinking. Callous disregard for life, yes. Enlightenment, no.

To then insist that the pubic butchering of the animal and feeding him to the lions was a scientifically and culturally valuable experience for the young children who watched is utter nonsense and reeks of a desperate attempt to justify the act. I have no idea what was going on in the minds of parents who allowed their young children to be subjected to this abuse, but this was not “natural” as zoo officials insisted. This was a man-made spectacle. In nature, Marius would at least have had a chance to evade his predators. Zoo officials lured him with a piece of rye bread before they shot him in the head.

As for moving up the execution when public protests grew, the haste with which the zoo, not only killed Marius, but got rid of his remains, might suggest to a suspicious person a sense of urgency to get rid of the evidence. Of what, I have no idea, because I’m not schooled in what zoos might do to their animals.

Which leads me to the bigger point here and perhaps the only good news to come from Marius’ untimely demise: It raises an awareness of the need to find out what exactly does go on in zoos and whether they are really necessary — in any way — for the benefit of animals, as opposed to entertainment of humans.

Copenhagen Zoo officials said such killings are routine in zoos, to preserve and protect the animals. Or perhaps, to balance the zoo’s budget? Zoos are limited in funds as well as space. After all, lions have to be fed and today’s cute giraffe baby can easily become tomorrow’s lunch in such conditions. How routine is this culling of zoo populations? Who decides? Does zoo staff have any input in the decisions? What are the regulations or guidelines? These questions beg to be answered.

Animals also obviously get bored being confined in zoos or even safari parks. And exploitation and abuse of animals is not unknown, especially in zoos lacking oversight by outside agencies. But Marius was killed in a respected zoo in a major European capital in a country with a reputation for progressive thinking. And he was the byproduct of a breeding program to which zoos throughout Europe subscribe and whose scientists endorsed the execution of Marius, the innocent.

In effect, they decided the world, never mind the Copenhagen Zoo, was too small for one more healthy, young giraffe

In the same week Marius was killed, thousands of dogs were poisoned and shot in Sochi, Russia, to “clean up” a sub-tropical city that was chosen to host the Winter Olympics. Apparently, the humans there and in Copenhagen never heard of controlling a population of animals by neutering them instead of killing them.

Such arrogant disregard for life will ultimately be the downfall of the human race.

The ‘picture of health’? Me? Sonofagun

“You’re the picture of health.”

(She has to be talking to me. There’s no one else in the room.)

“Thank you, doctor.”

This exchange took place last month at an office in Middletown. The picture was considerably less pleasant, never mind healthy, some 18 months earlier when I first walked into the doctor’s office. I was overweight, with the familiar accompanying physical complications — high blood pressure, pre-diabetic blood sugar readings, good and bad cholesterol numbers headed in the wrong directions, low B-12 and Vitamin D readings, a lack of energy, flexibility and stamina and swollen ankles.

If anyone asked, I said I felt “fine.” And I believed it.

Since that time, I have lost 50 pounds and kept it off. I no longer take the blood-pressure and diuretic medications that were originally prescribed. I’m told my numbers in all other areas are “good.” I have more strength and energy and my flexibility is improving as is my stamina. My ankles look great

And I plan to stay this way.

I’ve been writing occasionally about my improved health and the lifestyle changes that brought it about for two primary reasons: 1. I know myself well enough to know that when I share my plans publicly I am more likely to stick to them, especially when they involve significant challenges; 2. People have told me that my updates have inspired them to make health-related changes in their own lifestyles.

Now, I admit it’s a nice ego boost to be told that something I’ve written or done has motivated someone to try to improve his or her lot, and at at the same time I’m humbled to think I can make a difference in someone’s life. But the truth is my motives are purely selfish.

I’ve been muddling around this planet for 72 years and I’d like to enjoy at least a couple more decades here before moving on to the next station, whatever, wherever and whenever that may be. The key word in that sentence is “enjoy.” I don’t want to hang on as a creaky, chronically complaining old crank no one wants to be around. I can’t stop the years from adding up, but I sure can do something about the pounds and the blood pressure.

By way of updating my current condition, I am pleased to report that shoveling snow this winter from hell has not left me panting and praying for sheer survival. I don’t like it, but neither do I dread it. It’s good exercise (up to a point) and evidence of improved stamina.

Getting to this point has not been a matter of jumping on a stationary bike once in a while or taking an occasional stroll around the block. That used to count as “exercise” and, technically, still does. But that doesn’t take fat off or put muscle on. For me, it has meant changing the way I eat and making workouts, with and without weights, part of my routine. The workouts have been regular and irregular during this transition period, but they have been regular enough that the 50 pounds I lost have not been rediscovered.

My coach tells me I have a lot of nascent muscles. (I think some have progressed to actual muscles, but it’s not worth quibbling about.) The main point is that the bench presses (with dumbbells), planks, pushups, crunches and squats have shaped a new body (and vocabulary) and, while I don’t look forward to every exercise, I do appreciate the feeling of accomplishment at mastering something new and the emergence of lats, glutes, abs, quads, biceps and triceps.

I’m really talking about being fit here, not just not being fat. To me, that means combining regular workouts with a nourishing, appetizing, non-punishing diet. I don’t believe in starving myself or limiting portions of foods I enjoy which also happen to be healthful.

No, it has not been a piece of cake. Not long ago I reveled in the embrace of cheesecake. French fries used to count as a vegetable. Coke or Pepsi? Depended on my mood. Salt and vinegar potato chips, bacon, butter and sour cream on my “healthy” baked potato. Lots of salt, lots of sugar, lots of fat. Lots of XXL shirts and not much energy.

As I said, I was “fine.” There is, to be sure, a bit of bliss in ignorance. It’s all good … until it’s not. Turns out what I didn’t know was actually hurting me.

Without going into too much detail, I have stopped eating red meat and almost eliminated salt, processed sugar and saturated fat from my diet. I eat a lot more vegetables and fruit — as much as I want really — and try to eat foods that have not been “enhanced” by additives I can’t pronounce and whose chief purpose seems to be creating a long shelf life. That means less packaged goods and more of what used to be called “food.” For some reason, the less we add to our food, the more it costs, but that’s a topic for another time.

I don’t tell anyone how to eat (although I may still make suggestions to my son), nor do I tell anyone what they should do for exercise. Unless asked. Then, if I tell someone he can eat as much as he wants of different foods and and that it tastes good, but he says he wants to continue eating the same stuff, but smaller portions, I say, “Good luck.”

If I suggest regular exercise and I hear the occasional-stationary- bike-and-try-to-walk-regularly mantra, I say, “That’s good. Good luck.”

My feeling is that any significant change comes down to motivation, not need. I have my own personal motives to change major areas of my life and I am fortunate to have found someone to help me make those changes. I don’t believe in using “old age” as an excuse for whatever ails me. If I did, I’d still be taking the drugs the doctor prescribed a year-and-a-half ago. I’m not bragging; that’s just the way it is, for me. We make our own choices.

It’s simple. I like what’s happening to me physically, which is good for me mentally and spiritually. And I feel better than fine. I feel good.

A Tofurkey Thanksgiving? Excellent

The decision to celebrate a Tofurkey Thanksgiving was driven in large part by the price of salmon. With the traditional turkey-and-all-the-trimmings (and calories) extravaganza already off the table in my more health-conscious life style, fresh salmon sounded like a tempting alternative — and one that was probably more in keeping with the original get-togethers. But at $9.99 a pound, fresh salmon quickly lost its appeal.

Hence, Tofurkey. Knock off the smirking out there. I see you. This is the real deal.

The no-meat Thanksgiving-with-all-the-trimmings turned out to be delicious, more than filling, and incredibly healthful. And it was nothing like the “Everybody Loves Raymond” TV episode that grabbed laughs at the expense of a mother trying to improve her family’s health by serving a bunch of tofu shaped like a turkey.

For one thing, the Tofurkey roast is not shaped like a turkey. It’s shaped like a roast. It’s also stuffed with wild rice and bread crumbs and the recipe tells you to add apple slices to it. It comes with its own soy-based gravy. No animal fat. The whole roast cost just a buck more than a pound of salmon.

Of course, the secret to serving a successfully scrumptious Thanksgiving meal is what surrounds the “main” dish. Ours had lots of vegetables, all roasted in special sauces garnished with rosemary, sage and thyme and and topped with gravy. Two large baking potatoes, two large sweet potatoes and a butternut squash, all cut into big chunks, went in the pan with the roast. A second roasting pan accommodated a bunch of carrots, a bunch of broccoli and a red cabbage. We also had traditional cranberry sauce and cranberry/apple cider to finish it all off. You can check with Google to find out how nourishing all that was.

Everything came out of the oven looking and smelling great. So far, so good. On to the next step.

Trust me, it was with trepidation that I assumed the role of carver. I’ve done this plenty of times in the past, with electric and regular carving knives, and usually managed to slice up a lot of turkey relatively neatly. But would the tofu let me carve it, or would it crumble under the influence of a large, serrated knife?

Success! Following directions to make quarter-inch slices, the roast carved easily and neatly. The stuffing held up, too. The rest was easy. Spoon a bunch of vegetables — that were mouth-wateringly good — on the plate, top everything with meatless gravy (enhanced with some maple syrup and honey) and enjoy.

There was easily enough to serve four people, which means, in keeping with Thanksgiving tradition, there were plenty of leftovers. Indeed, the feast provided two more satisfying meals, one enhanced with plenty of brown rice.

I write about this not to toot my own horn. Rather, because I think there is still an attitude of condescension in this country about people who want to do something as foolish as to eat food that is not only good tasting, but good for them. As if it is somehow elitist to want to not fill one’s body with known killers such as salt, sugar and fat or dumb to want to live as long as possible in the best health possible.

I’m no food snob and I don’t think I’m dumb. I haven’t sworn off red meat for life and I haven’t said I’ll never eat another potato chip. Right now, though, I’ve found plenty of tasty alternatives that, along with a workout regimen, have helped me to lower my blood pressure, reduce my sugar and cholesterol numbers as well as my weight, all while enabling me to improve my energy, strength and endurance. I am becoming fit, not fat. Smirk all you want, but that sounds pretty good to a guy collecting Social Security.

Actually, I know that I’m not alone in this renewed interest in eating more healthful foods. Social media is awash in groups dedicated to more healthful eating. And supermarkets suddenly are offering dozens of varieties of chips and and other snack foods that are not just potatoes laced with salt. There are growing sections of organic, gluten-free and low-fat, low-salt, low-sugar products. Change is happening.

Of course, price remains a problem for some, which is not an accident. The chemical companies that control the world’s food supply are not interested in having consumers switch from the addictive, salt, sugar, fat and chemical-filled products they advertise widely and sell cheaply in large quantities. In fact, they don’t even want consumers to know what’s in their products, or else why would they spend so much money fighting efforts to make them honestly label their goods, including whether they contain genetically modified ingredients? Healthy consumers are not good for the companies’ bottom lines.

Yes, it can be a challenge reading labels these days to make sure what’s being promised on the package is what’s really inside. But like anything else regarding a significant change in how we live, a little bit of effort can bring big rewards.

I do not claim to be anything special with regard to this change in life style. If anything, this is a selfish decision on my part. I don’t deny myself the joys of eating good food. I love pizza (just not as often as before and without pepperoni). I am a huge fan of frozen yogurt. Salsa and chips (no salt or low-salt) is still one of my favorites. Guacamole is a new one. Chicken, turkey (yes, I’ll still accept a drumstick), seafood, sushi, beans, rice, yogurt and lots of greens, fruits and vegetables keep the menu from getting boring and keep me looking forward to many more years of healthy living.

So that’s where I am today. And yes, Tofurkey will be on the menu again.

The Measure of the Man, II

The first editorial I wrote for the Times Herald-Record in Middletown, N.Y., appeared on the 20th anniversary of the assassination of John F. Kennedy. I wrote the headline, too: “The measure of the man.”

Trying to “measure” the meaning of the life of a man who was literally loved and idolized by millions of people is no easy task, especially for a rookie editorial writer’s debut effort. But that’s what newspapers do and, in truth, I took it as a good omen that remembering JFK was my first assignment. He was a hero to me as to many young men my age when he was elected president. It was a combination of things: his youth, his wit, his easy-going style, his intelligence, his words, his sense of justice. Plus, we shared the same birthdate: May 29.

As fate would have it, JFK would come to be remembered, not on his birthday, but on the anniversary of his death. And not so much for what Americans received for having him as president for 1,000 days, but rather for what we lost by not having him much longer.

That first editorial said, in essence, that it would take more than 20 years to measure the meaning of the man. It acknowledged the things we had learned about JFK in the years since the shooting in Dallas — the flaws that made him human — as well as what I felt were his positive contributions.

Thirty years later, no longer a rookie editorial writer — indeed, retired after 23 years of writing editorials — with Nov. 22 approaching, I realized I had to write about JFK 50 years after his death (because that’s what old newspaper guys do). Before I started, I asked one of my reliable sounding boards, my son, Zack, what he knew about JFK. Zack is 19 and better informed than a lot of young people his age, so I figured his answer would provide me with a fair sense of what our education system had been telling kids about Kennedy.

“He was the first Catholic president,” Zack said. Correct. “He had an affair with Marilyn Monroe.” Uh, correct. ‘There’s still some theories that there was more than one shooter.” Right. “Do you think the Kevin Costner movie (“JFK,” directed by Oliver Stone) was true?” Well, the people portrayed were real. “The Bay of Pigs didn’t go too well.” No, it didn’t.

I took the opportunity to point out that Cuba was the site, not only of Kennedy’s biggest failure in global affairs, but also his biggest success. I was a little older than Zack is now when the world stood at the brink of a nuclear war over the presence of Soviet missile-launching sites in Cuba, aimed at the United States. I was a senior in college and knew full well, as did all my classmates, than no 2-S deferment was going to exempt me from what might happen if the Soviets did not — as Kennedy demanded — remove their missiles.

Kennedy ordered the U.S. Navy to blockade Cuba to prevent the shipment of Soviet missiles and equipment. Nikita Khrushchev, Soviet president, who had initially denied the existence of the missile sites, sent a naval fleet to Cuba, loaded with supplies and armed for battle. As the world watched and waited and prayed, Kennedy and Khrushchev exchanged messages. Kennedy prevailed. The Soviet fleet stopped short of Cuba and turned around. I lived to write this remembrance. Kennedy was dead not long after.

So here I am 50 years later, still looking to take the measure of the man and still wondering how that is possible. Kennedy had the gift of engagement. He appeared to be comfortable with whomever he was speaking. He had tremendous appeal to young people, being so different from the older, stodgier presidents who preceded him. He created the Peace Corps — a legacy that continues to this day with not enough fanfare. He made many Americans — and this is not a small thing — truly proud to be Americans. Not in an arrogant, flag-waving, we-know-better-than-you way. Just proud.

And he cheated on his wife and kept his serious health problems a secret from us and sometimes needed to be prodded by his brother, Bobby (another tragic loss) to take the proper (courageous) stand on issues. So the question I still ask myself is, what might JFK have done, what might he have meant to America and the world, if he had lived longer? What did we lose at Dealey Plaza?

Certainly, whatever innocence we still possessed. The wind was sucked from our sails as a nation and our domestic politics have slowly and steadily deteriorated into such partisanship that is virtually impossible for any president to speak to the minds and hearts of a majority of Americans the way Kennedy did. Maybe it would have happened even if Kennedy had lived a longer life and gone on to be an ambassador to the world of what America stands for. Or maybe not.

It dawns on me in writing this that it is an ultimately frustrating task to try to take the measure of another man or woman. I know what JFK meant to me personally. I know a lot of others feel similarly and others do not. I know what history has recorded (he was also the youngest man to be elected president) and what the tabloids have told us. I have a sense of what I would like to think Kennedy would ultimately have meant had he not died so young. But it’s only speculation.

The only man I can truly take the measure of is myself. It is 50 years since that morning when I was waiting at home to go to Fort Dix, N.J., to begin six months of active duty training. How do I measure up today? That’s a question I work on every day. It wasn’t always thus, but the years have a way of insisting on perspective. Maybe the answer will appear in some other writing. I have neither the space nor the inclination to do so here. I will say that, on balance, I’ll probably give myself a passing grade, but there’s still some stuff I’m learning.

For now, I’m through trying to take the measure of JFK, as man or president. Let the historians have at it. I’m going to try to take his advice and ask not what life can do for me, but what I can contribute to life. And I’m also going to remember to honor him not on the date he died, but on the date we both were born.

What’s It All About, Faust?

I was privileged recently to enjoy a local opera company’s production of “Faust,” by Charles Gounod. Based on Goethe’s legendary German tale, this is no easy opera to tackle and the Hudson Opera Theatre in Middletown, N.Y., more than did it justice.

I also came away from the production with a renewed awareness of what a cad Faust was. Or was he a rake? A rapscallion perhaps? Good words all, and yet each with a slightly different take on what kind of scoundrel the opera’s title character was. They are also words that, unfortunately, have pretty much disappeared from use in American conversation.

What would Faust be called today, in everyday American English? I wondered. Hmm, a disillusioned old man, a scholar no less, who makes a deal with the Devil to provide Faust with youth and the unquestioning love, adoration and physical pleasures of young women. In return, Faust agrees to give his soul to the Devil forever, in Hell. Faust even identifies the object of his desires — a young, teenaged virgin, Marguerite, who is impressed with his seeming sophistication and his attention to her — and the Devil helps him woo and win her with a dazzling array of jewels. In the process of his “conquest,” Faust gives the girl a sleeping potion (provided by the Devil) to give to her mother so that she will not disturb their night of, let’s call it love-making. The potion kills the mother, leaving Marguerite guilt-racked and further vulnerable to the attentions of Faust, who promptly abandons her.

Long story short: Marguerite gets pregnant, is ostracized by a society that doesn’t look kindly on young, unmarried mothers and is brutally condemned by her brother, a soldier returned from the wars. In utter depression, with nowhere seemingly to turn, she kills her baby, is arrested, thrown in prison and condemned to death. At this point, Faust, the lout, returns with an offer to help her escape (again, courtesy of the Devil).

Clearly, the man is an a–hole.

At least, that’s what he’d be called today, I concluded. That’s it. One overused obscenity providing not the slightest clue as to the true nature of the man’s churlish behavior. It seems to me that when words lose their precision they eventually lose their meaning. Communication gets fuzzy. And so, Congress is a bunch of a___s. The president is an a____. The guy who cut me off in traffic is an a____. My boss is an a______. My brother-in-law is a flaming a______. Rush Limbaugh is an a______. (Well, sometimes it works.)

In the spirit of the late Bill Safire, I have compiled a list of words that could be used — once upon a time were used — to describe men of questionable, if not dubious, character. You may have noticed a few sprinkled throughout this piece. In the process, I have become impressed with the diversity of choices the English language once offered to describe insensitive blaggards like Faust.

There’s a good one. Blaggard, or blackguard. It’s derived from

Old English usage, meaning a “black-hearted” person. Like Faust. It can mean a villain, a rogue (another rarely used good word), an evil person or someone with dubious morals. Faust personified.

Let’s go back to “cad.” It is defined in one dictionary as “an ill-bred man, especially one who behaves in a dishonorable or irresponsible way toward women.” Perfect.

For the record, my list thus far includes: scoundrel; wastrel; ne’er-do-well; rogue; cad; lout; laggard; reprobate; scalawag; rapscallion; rascal; bounder; oaf; blackguard; boor; and dolt

The French, of course, always have a word for anything. In this case, considering it’s a French opera, the perfect word for Faust is roue. A roue is defined as a dissolute person. That is, someone devoid of most moral value, especially one who places values on sensual pleasures. Think Michael Caine in “Alfie” and Warren Beatty in “Shampoo.” Matthew Mcconaughey in most anything today. The word roue comes from rouer, meaning to break on the wheel, the feeling being that such a person deserves to be punished in this manner.

A roue is the French version of a favorite of mine, a rake, which leads to the exquisite lothario and libertine and, eventually, to perhaps the one commonly used modern word that accurately fits the young-teenager-loving Faust: lech.

I’m open to further suggestions for my list. Indeed, if we weren’t such a nation of language lay-abouts and if we weren’t in such apparent denial about the variety of villains in society today, we could revive some of these perfectly usable and descriptive words. And we could give the A-word a much-needed rest.

Can We Just Not Call It Food?

Sometimes, a little bit of curiosity can ruin your appetite.

I love raspberry-flavored, frozen Greek yogurt. I defy you to find a more soul-satisfying treat, especially with some dark chocolate shavings sprinkled on top.

Recently, having become a more conscientious food label-reader, I noticed a story on the Internet about ingredients that don’t have to be listed, but come under the heading of “natural flavoring.” Among the “natural flavoring” ingredients listed was “castoreum.”

“Hmm, something from the castor bean?” I wondered.

Off to Google I went and soon found myself in a state of shock, disbelief and a little bit of, well, disgust.

It turns out that castoreum is a yellowish secretion from the castor sac of adult male and female beavers. The castor sac is located between the anus and genitals in beavers and, along with its urine, is used to scent mark the beaver’s territory. Sweet.

While I had to admit the source made it a “natural” ingredient, I also wondered why the natural flavor of raspberries wasn’t sufficient. And more to the point, I wondered who the genius was who decided that the exudate from a sac located next to a beaver’s anus would be a good thing to add to yogurt to improve its flavor. What was the “Eureka!” moment? Who did the first taste test?

It turns out castoreum has been used for years in perfumes. So I imagine it wasn’t such a leap to go from putting a dab on the wrist to wondering if a shot of beaver sac juice would enhance the flavor of ice cream, candy, yogurt, iced tea and gelatin, especially, apparently, strawberry- and raspberry-flavored foods.

In case you’re wondering, the Food and Drug Administration puts castoreum in the “Generally Regarded As Safe” category. Maybe so, but I am generally going to think twice before I buy raspberry yogurt again.

As it happens, the search for information on castoreum also led me to data on what I at first thought was the source of castoreum — the castor bean. More bad news.

The castor bean (actually a seed) is regarded as the deadliest plant on the planet. It is the source, yes, of castor oil. But it is also the source of ricin, a powerful poison with no known antidote. The bean is also the source of a food additive identified usually as PGPR. I have learned that when I see a bunch of letters like that on a food label, it’s wise to find out what they mean.

So, remember the added ingredient to my favorite dessert — the chocolate shavings on top? Guess what’s listed on the label of Hershey’s dark chocolate bars? Yup. PGPR. Polyglycerol polyricinoleate.

PGPR is a sticky yellowish liquid that acts as an emulsifier — it holds the chocolate together. It is also much cheaper to produce than cocoa butter, meaning Hershey’s can give you less chocolate in its chocolate, at lower cost to itself, thus making more profits. PGPR also lets the candy sit on the shelves much longer and still be considered safe to consume. Apparently, we’re supposed to ignore that word ricin in the middle of the PGPR as well as the lack of cocoa in the chocolate bar. The FDA says PGPR is safe for human consumption, although lab tests on chickens showed what was described as reversible liver damage.

Finally, while still looking at the Hershey’s label, the word vanillin caught my eye. Again, not necessarily what it seems to be. Yes, vanillin is an extract of the vanilla bean and is used as an additive in lots of foods. But, because of the rarity of the bean and the cost associated with producing it, much vanillin today is of the synthetic variety, coming from lignin, which is a byproduct of, ahem, wood pulp.

So there you have it, my favorite dessert: ricin and wood pulp sprinkled on top of beaver scent-marking sac juice. Some days it just doesn’t pay to read the labels.

The Fruits of Obama’s Syria ‘Defeat’

In the category of Things Are Never Quite the Way They Appear (especially in international diplomacy), I give you what many “pundits” regard as President Barack Obama’s humiliating defeat in getting Syrian President Bashar Assad to: 1. Admit that his country, contrary to all his previous claims, has a stockpile of outlawed chemical weapons; 2. Agree to promptly provide an inventory of those weapons and 3. Turn the weapons over to a United Nations delegation for the purpose of destroying them all by next year..

This humanitarian feat, which will save countless thousands of lives, was accomplished without firing one missile in righteous anger or placing one set of American GI boots on the ground in the midst of Syria’s brutal civil war. Stay out of Syria is what a solid majority of Americans said they wanted ever since Obama broached the subject of a punishing strike against Syria for using chemical weapons against its own people. It is also what most Republicans in Congress insisted they wanted, contrary to their usual position on military intervention, but consistent with their policy of opposing anything Obama proposes. In this case, to the president, Republican motives didn’t matter; end results did.

This is strictly my opinion. I have no special insight into White House strategy, no one leaking me information on the president’s intentions. Rather, I have my own version of common sense and what I believe is a willingness to judge events by outcomes rather than political bias.

One of the things I believe may not necessarily be as it appears — or as many critics would have it be — is the president’s intent. I do not believe Barack Obama is so dumb as to submit a proposal to Congress that he wants passed if he knows it will be defeated. He is a biracial man living in a racist country who earned degrees from two Ivy League schools — Columbia and Harvard Law, where he was editor of the Law Review. He got elected president. Twice. Having made history, he also has guided the country slowly out of a devastating, largely Republican-created recession and got a health care plan for all Americans through a Congress that can barely agree to meet. This is one smart man (although I think his “red line“ on chemical weapons was a tactical mistake).

So, I have serious doubts that the president ever intended to launch a military strike against Syria, precisely because of the opposition he knew existed among average, war-weary Americans, as well as entrenched anti-Obama, rank-and-file Republicans. He signaled that when, after days of threatening a strike, he agreed to ask Congress to debate and vote on the issue, without even asking members to cut short their vacation to do so. That made the proposal DOA, with even many Democrats opposed to U.S. involvement in Syria because of their constituents’ opposition to it.

Ironically, with the disarmament agreement now being finalized with Syria and Russia, Obama’s continued threat to use military force if Syria fails to comply with the agreement gains much more validity and support among Americans than his original threat. Assad has admitted he’s got the weapons. French, British and American experts, as well as Human Rights Watch, say, based on a United Nations report, that there is no doubt it was Assad’s troops, not rebel forces, that used them. The U.S. Navy’s continued presence in the Mediterranean Sea now takes on even greater import to Assad.

Then, of course, there is the disarmament agreement itself. Americans are strongly of two minds on this:

1. One group, that didn’t necessarily want to attack Syria, nonetheless thinks it is embarrassing that Russian President Vladimir Putin is getting credit for the plan and that he lectured Americans (in the New York Times no less) about thinking they had to act as morality policeman of the world.

2. Another group feels it is high time America stopped acting as morality policeman of the world, focused on domestic issues instead and enlisted other countries’ help in finding diplomatic, rather than military, solutions to international crises.

I don’t think Obama cares that Putin is getting most of the credit for the chemical weapons agreement. I also don’t think the agreement just sprang into Putin’s head in a dream one night. In fact, Russian officials have acknowledged such a plan was discussed months ago with American officials. Just as Obama is no clueless patsy in this, Putin is no hero. He is no champion of human rights and Americans shouldn’t really pay serious attention to what he has to say about life in the U.S.

In fact, Russia has been the main supplier of arms for the Syrian Army, enabling the civil war to drag on and produce more than 100,000 deaths and a flood of millions fleeing their country. But it is precisely for the link with Syria that Putin had to appear to be the primary force behind the non-military plan.

Of course, this helps Putin gain even more political stature at home. As mentioned previously, Obama has been elected president twice. He cannot run again. His place in history is forged and his future as a statesman guaranteed. But Putin has an Olympics coming to his country next year and has stirred worldwide condemnation for Russia’s anti-gay laws. I wouldn’t be surprised if Russian authorities were tolerant of demonstrations supporting gay rights next winter or if Barack Obama were among the world leaders being most vocal about demanding such behavior. And, while he won’t show it, I don’t think Putin will regard his apparent backing down on gay rights as a “humiliating defeat” on the international stage.

Meanwhile, a major store of chemical weapons will be destroyed, a potential threat to Middle Eastern neighbors of Syria will have been removed, rebel forces in Syria will know they don’t have to fear facing such weapons, not one American soldier will have set foot in Syria, not one Syrian citizen will have been listed as collateral damage in a strike by American “smart” missiles, the United States will have shown cynical countries that it really can use diplomacy, rather than military might, to resolve a crisis, Assad will have been shown to be a murderous liar, Putin will have had some of his Lone Ranger image stripped away in international diplomacy, President Obama, counter to his image in some corners as a reluctant warrior, will have appeared to be willing and eager to use U.S. military power, and Republicans will have emerged as a party opposed to war. By the way, the overwhelming majority of Americans support the non-military resolution of the Syrian crisis.

Humiliating defeat my ass..
